(Note, all pieces except the eyes have a 1/4" (7mm) seam allowance. Also, the pieces labeled "tape" cut as labeled separately for the outside, and cut one taped together in red for the inside.)

i don't understand where in the templates it says nose cut 1 but it's only about half the normal length

Yes, it's exactly half. On the end labeled fold you have to flip the pattern over and trace around that too. The fold line is the center of the piece and you don't cut there. :)
